Yields 1 large bowl
1–12-ounce bag frozen, sweet, yellow corn, defrosted
2 medium jalapenos, de-seeded and chopped
½ of a medium red onion, finely chopped
¾ cup fresh cilantro, chopped
Juice from 2 limes
½ teaspoon salt
½ teaspoon pepper
Combine all ingredients in a large bowl and mix well.
