4 avocados, halved
3 small lemons, halved horizontally, cut sides lightly oiled
2 handfuls chopped fresh herbs (parsley, thyme, chives, basil, rosemary, whatever you like)
2 tablespoons walnuts, toasted
1 pint cherry tomatoes, halved
- If using grill, set up grill for direct-heat grilling. When the coals are ready, lay the cut side down (use cooking spray) and lemons on the grate and grill until grill marks form, and lemons are lightly charred. If broiling, place face-side up, and broil, watching closely, until starting to brown.
- Chop whatever herbs you have on hand, and mix with olive oil and salt. Toast nuts and slice cherry tomatoes. Top the avocado halves with herbs, sprinkle with nuts and tomatoes, then give the caramelized lemons a good squeeze over the entire spread.
