Tabbouleh is a traditional Lebanese dish chock full of naturally good-for-you ingredients. It tastes incredibly fresh, and makes a great side-dish or even a stand-alone lunch! This Detox Tabbouleh is made with cauliflower rather than the usual bulgur wheat to give you even more boost.
Serves 6
Ingredients:
1 head cauliflower
1 bunch parsley, chopped
1 small bunch fresh mint, chopped
1 pint cherry tomatoes, halved
1 large cucumber, chopped
2 tablespoons hulled hemp seeds
Juice of 2 lemons
2 tsp honey
2 green onions
½ tsp salt
Pepper, to taste
Instructions:
- Using a box hand grater or food processor, grate the cauliflower florets into small rice-like granules. If hand-grating, grate until the stem is remaining, and discard the stem. Place cauliflower into large bowl.
- In small cup, whisk lemon juice, honey, salt and pepper.
- Combine all ingredients into large bowl with cauliflower, pour lemon-juice honey mixture over top, and enjoy immediately. Best eaten fresh, but I find it will keep in refrigerator for up to 2 days.
