Serves 4 as an appetizer

Ingredients:

15 large Medjool dates, pitted

5 oz fresh goat cheese

1 teaspoon Italian seasoning

8 slices bacon

1 tablespoon balsamic reduction (can make this, or simply buy it in the vinegar section of most grocery stores. To make, heat balsamic vinegar over medium heat on stove, stirring frequently until thickened)

Instructions:

  1. Preheat oven to 375 degrees F
  2. If dates are not pitted, go ahead and remove the pits.
  3. In small bowl, combine the goat cheese and Italian seasoning.

Stuff dates with ample amount of goat cheese, wrap ½ piece of bacon around one date, and bake for about 20 minutes. Top with balsamic reduction and serve warm.
